Night market snacks might be your first impression of Taiwanese cuisine, but Taiwan also has a more delicate and complex traditional cuisine that is becoming ever more rare with the passing of time. Mountain and Sea House spent two years restoring an old 1932 house back to its original glory, while at the same time redeveloping methods that use local ingredients to create the nostalgic taste of traditional Taiwan. Through consultations with retired master chefs and adopting time-honored processes found in old recipes, Mountain and Sea House fuses modern and traditional cooking techniques with homegrown ingredients to rediscover the true taste of authentic Taiwanese cuisine.
